Chocolate Orange CupcakesI have been known to eat a whole chocolate orange in one (beware your mouth may burn!), so making a batch of chocolate orange cupcakes for a friend’s birthday party was no chore.

The secret to these heavenly cupcakes is the surprise chocolate orange ganache filling – I also really like the rich brown and orange colour combo, perfect for autumn.

Use your favourite chocolate sponge recipe, adding a squeeze of orange juice or extract for a subtle flavour, then spoon into cupcake cases and cook.

For the ganache:

100g whipping cream

100g orange flavoured dark chocolate broken into pieces ( Lindt Orange Intense is my favourite)

  1. Heat the cream in a pan until it is just about to boil
  2. Take the cream off the heat and add the chocolate, leave for a few minutes without stirring.
  3. While the chocolate is melting in the cream, hollow out a little sponge from the middle of your cupcakes (I used a potato peeler, an apple corer works well too)
  4. Once melted, give the chocolate and cream mixture a stir, then carefully pour into the sponge hollows you have created and allow to set.

For the orange icing:

250g icing sugar, sifted

80g unsalted butter, at room temperature

A good squeeze of orange juice

Red and yellow food colouring – mix a drop at a time until you get the orange shade you desire

My piping skills leave much to be desired (a proper piping bag would help, hopefully Father Christmas is reading this!), I attempted a DIY job with a sandwich bag filled with orange icing – big mistake. In the end a spatula and steady hand were the only option.

The result was still delicious.
