Stack of Oreos

A couple of years ago I drove Route 66 with two of my girlfriends, we enjoyed re-enacting scenes from Thelma & Louise and got up to many antics (far too outrageous to share in public), I returned home with many happy memories and a serious Oreo addiction.

If I thought Oreo’s could not get any better I was wrong, just imagine the chocolatey goodness when you bake them in a brownie! And yes you guessed it… another Lorraine Pascale recipe (they are just too good!). I have made friends, kept friends and charmed enemies with these brownies; they are great as a cake alternative or as an on-the-road snack. (However, if your sweet tooth has gone on vacation these delish nibbles will definitely do the trick instead.)

For the brownie mix:

165g butter

200g dark chocolate

3 eggs

2 egg yolks

2 tsp vanilla extract

165g soft light brown sugar

2 tbsp plain flour

1 tbsp cocoa powder

pinch of salt

1 pack of Oreos

  1. Preheat oven to 180 °C, grease a square baking tin and line with baking paper.
  2. Melt the butter, once melted take of the heat and add in the chocolate in small pieces. Leave it alone, don’t stir until the chocolate has softened and melted.
  3. Whisk all the egg and vanilla together until light and fluffy, gradually whisk in the sugar. Once the egg and sugar mixture has stiffened pour in the chocolate.
  4. Add the flour, cocoa powder and salt. Break the Oreos into quarters and add half of them into the mixture, then pour into your prepared tin.
  5. Scatter the rest of the Oreos on top, pressing them in slightly. Then bake in the oven for 25-30 mins.
