Spiced Sour Cream Porridge

A perfect bowl of comfort to indulge in on a dark winters morning, or as sustenance for candlelit evening present wrapping and a touch more decadent than this porridge recipe.

For the porridge:

large handful of organic porridge oats

organic whole milk

1 tbsp soured cream

tsp light brown soft sugar

tsp cinnamon

Half an apple grated finely

1. Place the porridge oats in a pan and pour over enough of the whole milk to just cover (or follow your porridge packet instructions), then add the soured cream.

2. Stir over a medium heat until the oats are soft and the porridge is thick, creamy and piping hot.

3. Place the porridge in a warm bowl and sprinkle over the cinnamon and brown sugar, then grate over your apple. I use a fine grater so the apple turns into an apple sauce as it mixes with the sugar and cinnamon. I love the tartness of a Granny Smith but choose a sweeter variety of apple if you prefer, don’t omit the skin, grate that in too for a little extra fibre to offset the naughtiness of the cream.

Or try…

Instead of the apple try soaking some currants in orange juice overnight, sprinkle over your porridge and finish with a grating of orange zest.
